
We made this Turkey Chili recipe the weekend of our mountain getaway. My friend Katie was awesome enough to share it with me so I am paying it forward. Thanks so much Katie....miss you and love you!
You will need:
*2 cans whole or diced tomatoes, undrained
*1 6 oz. can tomato paste
*1/2 cup chopped onions
*1/2 cup chopped celery (use leaves too..adds flavor:) )
*1/2 cup chopped green peppers
*2 garlic cloves, minced
*1 tsp. salt
*1 1/2 tsp. ground cumin
*1 tsp. dried oregano
*1/2 tsp. cayenne pepper
*3 tbsp. brown sugar
*15 oz. can garbanzo beans
*1/2 lb. ground turkey
*3/4 cup shredded cheddar or monterrey jack (or more..it just tastes so good!)
Combine:
All ingredients into your crockpot except for the turkey, beans and cheese. Cook on low for 6-8 hrs. or high for 3-4 hours. Add the beans one hour before serving. Sautee the turkey over the stove with 1 tbsp olive oil and a bit of oregano and garlic until thoroughly cooked. Add turkey to the crockpot and however much cheese you want. Serve with cornbread/corn muffins. Enjoy! :)

We enjoyed it so much we are making it this weekend for our trip to Wintergreen.
Also, speaking of recipes...I did make the cake in the below post and it is/was AWESOME. I highly recommend it. And the bright colors made me so happy....i will try and take some pics of it before it is all gone:-)
